Will I get a job if I don't learn AI and machine learning?

This question does not make sense. "AI and Machine Learning" is a specialized corner of a single career field. It has little to do with the rest of that field, much less with some unrelated fields, and absolutely nothing to do with the vast majority of races.

And I will never do it. You can also ask if you will get a job without learning metallurgy, because there are doors everywhere with metal handles.

Whoever has been feeding you this nonsense, you better find a better source for professional advice.

The advent of AI is greatly exaggerated, it has not yet arrived. Machine learning is a computer technique used to classify samples on a suitable class label, that is, its limited use. These roles have been oversold and it is the sheer number of enthusiastic workers with those qualifications that is likely to be disappointed.

You are more likely to get a job if you don't limit yourself to these topics. Engineering in all its forms is a good option to find a role for life.
