Why do homeless people fight at fast food restaurants when they receive poor service?

Because the service in general is not bad. It's the homeless man who goes crazy because he's high or crazy, or trying to make himself feel important by being deliberately offensive to others. It is similar to gangs that shoot you for "disrespecting them." When people have absolutely nothing to give themselves a sense of self-worth, little problems become big.

However, they should be thrown on their ass.

I can only imagine it's because gathering enough to buy food and then being treated poorly, denied service, or receiving poor quality food is infuriating for them. I would if I was in your situation. Desperate people living on the edge are often hungry and exhausted. I can see how this would dramatically increase your personal stress load and make managing conflict more challenging.
